To Your Health: Pits, Seeds, Rinds, Pulp, Laughs, and Coconuts
I decided it was time I jumped on the juicing bandwagon. I used to eat a lot more fruits and vegetables and just don’t have it in me to chow down a ton anymore. My mother’s aide asked for a juicer so I bought her one. My mother decided she wasn’t interested in what it could do. When the aide returned to Florida I took the juicer and decided it was time to turn over a new leaf. Or fruit or veg.
I had purchased what I later found out was a “young coconut” from the local HMart. It was white and fibrous and I had no idea that it wasn’t supposed to have an outer shell: that IS the outer shell with the darker fiber removed. After watching several YouTube lessons on coconuts and getting it straight, I was able to extract almost two cups of coconut water and a quarter of a cup of jiggly white coconut meat. Up until that time I ignorantly tried to extract the juice from the white outer covering. What does a city girl know?
I experiment with different combinations, add turmeric sometimes, or cinnamon. Today I made a batch with some of the coconut water. It tastes best when on ice for a while. It’s amazingly delightful and refreshing and it feels so damn healthy.
