Description:
From Weight Watchers Magazine, 1982:
I enjoyed this recipe years ago and just discovered it in an envelope. Guilt free.
Ingredients:
4 1/2 ounces uncooked quick-cooking rolled oats
1 1/4 teaspoons ground cinnamon, divided
1/4 cup reduced calorie margarine
1/3 cup frozen concentrated apple juice, no sugar added, divided
1 1/2 cups canned pumpkin
3/4 cup buttermilk
12 pitted prunes
3 eggs
sweetener to equal 9 teaspoons sugar
1 teaspoon vanilla extract
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 cup prepared frozen whipped topping, thawed
Directions:
Preheat oven to 400° F. Combine oats and 1/4 teaspoon cinnamon. Blend in margarine; when evenly distributed, add 2 teaspoons concentrated apple juice and stir until combined.
Press mixture into the bottom of an 8″ pie plate or quiche pan (with removable bottom). Bake 10 minutes.
Meanwhile, in workbowl of food processor fitted with stainless steel blade or in blender container, process remaining ingredients except topping, until chunky.
Pour filling into prepared shell.
Bake 30-40 minutes or until set.
Allow to cool.
Garnish with whipped topping.
